These baked avocado eggs are so good, you’ll want to eat them throughout the day – not just at breakfast!
Ingredients:
- 2 avocados
- 4 eggs
- salt
- pepper
- 55g bacon bits
- 1 chopped cherry tomato
- 1 chopped sprig of fresh basil
- shredded cheese of your choice
- 2 chopped tablespoons fresh chives
Method:
Make sure that you’ve preheated your over to 200°C. Next, slice your avocados in half and remove the pits. Place the avocado halves onto a baking sheet, and scoop out a small amount of flesh to make a bigger hole. Crack one egg into each hole, and season with salt and pepper to taste. Next, add the toppings of your choice and bake for 15 minutes. Once cooked, add fresh herbs to finish and enjoy!
