Are you bored of having the same old breakfast? Here’s something which will fill your palette with health and all the goodness. It’s a corn and mushroom sandwich today. Mushroom is good for your bone health and corn is low in fat. These two are wonderful ingredients to have for your breakfast. A wholesome sandwich is all that your body needs as breakfast on that busy day. Its quicksand is easy to make. It can be packed as your kid’s lunchbox very quickly. Let’s begin with the recipe.
Ingredients:
• 1 cup of mushrooms (sliced into small pieces)
• 1 cup of boiled corn kernels
• ½ onion chopped
• ½ capsicum chopped
• ½ red and yellow bell peppers chopped
• 1 teaspoon of minced garlic
• 1 teaspoon of minced ginger
• 1 teaspoon of chili flakes
• 1 teaspoon of black pepper powder
• 1 teaspoon of dried fenugreek leaves
• 1 teaspoon of dried mixed herbs (or herbs of your choice)
• Salt to taste
• 1-½ teaspoons of Oil/ Butter
• Bread of your choice (Multigrain is also a better option)

For the dipping sauce:
• ½ cup of mayonnaise
• 1 teaspoon of sweet chili sauce
• ½ teaspoon of minced garlic (roasted is preferred as well)
• Handful of chives or spring onion greens
• ½ teaspoon of dried oregano
Instructions :
For the filling:
• Take a pan and add some oil/ butter. You can prepare the recipe either with oil (olive oil preferable) or with butter.
• Heat the pan on a medium-low flame.
• Add the minced garlic and ginger and red chili flakes
• Saute it for a minute or two till the raw smell of the ginger and garlic goes.
• Add the mushrooms and saute them on high flame for some minutes.
• Add the corn kernels and mix them.
• Add the bell peppers and onions and mix them well.
• Add salt and pepper and mix all of it well.
• Turn the flame to medium-low, so that the mushrooms leave some water.
• Cook till all of the water evaporates.
• Add the dried fenugreek leaves and add the mixed herbs.
• The filling is ready. Keep it aside and let it cool for some time.
For the bread:
• Take any bread of your choice.
• Toast it with either oil or butter.
For the dipping sauce:
• Take a bowl and add the mayonnaise, sweet chili sauce, minced/roasted garlic, oregano, and chives.
• Mix all of it and the dipping sauce is ready.
For the sandwich:
• Take the bread of your choice.
• Spread a generous amount of the dipping sauce.
• Add the sauteed veggies.
• Spread the dipping sauce on the other side of the bread.
• Add some chives before putting the second bread.
• Toast it in a toaster till crisp or in the pan with a dash of oil/butter till golden brown and crisp on both sides.
