Ingredients:
• 2 medium-sized carrots peeled and chopped
• 1 large potato peeled and chopped
• 1 cup of French beans chopped
• 1 cup of peas
• 1 large onion thinly sliced
• 3-4 cloves of minced garlic
• 1-inch ginger cut into juliennes
• 1 green chili slit (Spice can be added more or less according to taste)
• ½ inch of cinnamon stick
• 4-5 five cloves
• 3-4 peppercorns crushed
• 1-2 green cardamoms
• 12-15 curry leaves
• Coconut milk (thick)
• 2-3 teaspoons oil (coconut or olive oil can be used)
• Salt to taste

Instructions:
• Heat the flame in a pan. Add oil to the pan. Let it heat for a few seconds to a minute.
• Add the spices like the cinnamon stick, cloves, crushed peppercorns, and green cardamoms to help these release their flavor into the oil.
• Saute it for a minute.
• Add the onions, slit green chili, curry leaves, ginger juliennes, and minced garlic.
• Saute them for a minute or two.
• Cook till the onions are translucent. Do not fry the onions till brown.
• Add the veggies, like the carrots, French beans, peas, and potatoes.
• Give it a good mix. Turn the flame to low-medium.
• Let the vegetables imbibe all the flavor of the other ingredients.
• Cover and cook it for a while. (5 minutes approx.)
• Open the lid give it a good stir and add the coconut milk and salt at this stage. Add equal portions of water to dilute the stew.
• Let the veggies soak all the flavor from the coconut milk.
• The veggies should be tender by now and the curry should also thicken a bit.
• Turn off the flame. Serve it hot or with a slice of bread.
